We’ve seen it online, on our favorite reality shows, and on the Instagram grid of just about any foodie. It’s official: the avocado is in a renaissance — and for good reason, too. It’s delicious, healthy, and can be served a hundred different ways. This creamy fruit has more than 25 essential nutrients, such as protein, iron, and riboflavin, just to name a few! Avocados are high in vitamins and they also carry numerous health benefits. And as if we need to give you more reasons to love avocado, especially in your house and lot for sale, here are 6 easy ways you can serve up this nutritious green gem.

1. Avocado Breakfast Bowl

Busy day? This breakfast bowl is going to supply you with the nutrients you need to kickstart your to-do list. While it’ll definitely fill you up until lunchtime, preparing it won’t fill up your schedule — quick, easy, and tasty: An avocado win!

Avocado Breakfast Bowl

Servings: 3-4 people

Ingredients:

1 cup quinoa

2 cups sweet potato, peeled and chopped

1 tbsp. Extra-virgin olive oil

Kosher salt

Freshly ground black pepper

4 large eggs

2 cups baby spinach, chopped

2 small avocados, cubed

What you’ll need to do:

Quinoa: In a medium saucepan, mix quinoa and 2 cups of water over medium-high heat and bring to a boil. Once boiling, reduce heat, cover, and let it simmer until most water is absorbed. Remove from heat and let the quinoa cool for 5 minutes.

Roast sweet potatoes: preheat oven to 450º. Prepare a large baking sheet and toss sweet potatoes, oil, and season with salt and pepper. Roast until soft and golden.

Peel the hard-boiled eggs and halve them lengthwise.

Prepare your bowl and assemble the ingredients as you please: divide cooked quinoa, roasted sweet potatoes, hard-boiled eggs, and chopped spinach and season with salt and pepper.

Top bowl with ½ avocado and 2 tablespoons of cheese (optional).

2. Mango Avocado Spring Rolls with Easy Peanut Sauce

Serving up a beautiful rainbow-in-a-bowl, this next recipe is guaranteed to be a sure hit for your next weekend potluck with family or friends in your house and lot for sale! Imagine: A fresh batch of mango and avocado rolled with greens into a spring roll — who wouldn’t want to bite into that?

Servings: 10-12 people

Ingredients:

For spring rolls:

2 ounces of rice stick (vermicelli) noodles

2 mangoes, peeled and thinly sliced

2 avocados, peeled, pitted, and thinly sliced

2 carrots, thinly sliced

1 English cucumber, thinly sliced

A quarter of small red cabbage, thinly sliced

1 bunch fresh cilantro leaves

1 bunch fresh mint leaves

10-12 spring roll wrappers

For the peanut sauce:

⅓ cup natural peanut butter

2 tablespoons hoisin sauce

1 tablespoon low-sodium soy sauce

1 tablespoon rice vinegar

½ teaspoon chili garlic sauce

¼ teaspoon sesame oil

⅓ cup warm water

What you’ll need to do:

Peanut Sauce: Mix all ingredients in a small bowl until smooth and combined. Add water for a thinner sauce consistency.

Spring Rolls: Prepare the thin rice vermicelli noodles according to package directions. Once done, transfer the noodles to a strainer and rinse with cold water, and drizzle with sesame oil to prevent them from sticking together. Set aside.

Dip the spring roll wrapper in warm water for about 20-30 seconds. Transfer the spring roll wrapper to a plate or a clean towel spread out on a flat surface.

Arrange all the fillings in the center of the wrapper in a vertical line. Follow the steps on how to fold the wrapper effectively when you watch the video on the link.

Serve immediately with the peanut dipping sauce, or refrigerate for up to 3 days.

3. Kiwi Avocado Smoothie with Lime and Honey

Kiwi Avocado Smoothie with Lime and Honey

Servings: 1-2 people

Ingredients:

½ ripe avocado

2 kiwi peeled

⅛ cup lime juice + 1 tablespoon

⅛ cup – ¼ cup Almond milk

Honey to taste

2-3 ice cubes

What you’ll need to do:

Add all the liquid to the blender first, followed by the fruits and ice cubes.

Cover and start on low speed, gradually increasing to high speed.

Blend until preferred consistency is achieved. Enjoy!

4. Chicken Taco Avocado

Add a twist to the classic chicken and tacos with an avocado surprise. This recipe also makes for a great avocado boat presentation that your family and friends will surely want to get their hands on!

Servings: 6 people

Ingredients:

For the filling:

1 cup of black beans, cooked

1 cup canned corn

1 4-oz can green chiles, divided

1 cup shredded chicken

1 cup shredded cheddar

1 package taco seasoning

2 tablespoons fresh cilantro

3 ripe avocados

For the dressing:

1 cup ranch dressing

¼ cup lime juice

1 tablespoon fresh cilantro

1 teaspoon kosher salt

1 teaspoon fresh ground black pepper

1 cup canned corn

What you’ll need to do:

Heat broiler. Prepare the filling by combining all the ingredients in a large bowl. Stir until combined.

Halve, pit, and hollow out the insides of the avocados. Mash inside in a small bowl and set aside.

Place avocado boats face up and fill each with ⅓ cup of filling. Top with more cheddar and more fresh cilantro, then broil until the cheese has melted.

Prepare the dressing by mixing all the ingredients. Stir to combine. Fold in mashed avocados and mix until smooth.

Transfer avocado boats from oven to serving dish. Drizzle with dressing. Serve.

5. Avocado and Lemon Zest Spaghetti

Avocado and Lemon Zest Spaghetti

Servings: 4 people

Ingredients:

Sea salt and freshly ground black pepper

400g spaghetti

Olive oil

4 tablespoons capers in brine, roughly chopped

1 clove of garlic, peeled and very finely sliced

Grated zest of 2 unwaxed lemons, and juice of 1⁄2 a lemon

Fresh basil, leaves picked

Fresh parsley, leaves picked

2 ripe avocados

What you’ll need to do:

Cook pasta according to its packet instructions.

Heat olive oil in a low-heated large frying pan, and add the capers and garlic. Saute until the edge of the garlic starts to slightly brown. Remove from the heat and add the lemon zest.

Chop the herbs and add them to the pan. Halve the pitted avocados and make criss-cross cuts through the flesh, scooping out each half into the pan with a spoon. Stir to mix all the flavors together.

Scoop out half a cup of the pasta water before draining it. Drain the pasta and add it to the frying pan with a little cooking water. Drizzle with olive oil.

Taste and add salt, pepper, and lemon juice as needed. Enjoy!

6. Chocolate Avocado Pudding Pop

2 medium ripe avocados

¼ cup chocolate chips melted

3 tablespoons cacao powder

3 tablespoons maple syrup

Optional topping:

½ cup chocolate chips + ½ teaspoon coconut oil

crushed nuts such as almonds or pistachios

What you’ll need to do:

Scoop the avocados into a blender along with the other ingredients.

Blend until smooth. Pour into ice pop molds and freeze overnight.

Serve the pops and drizzle them with melted chocolate chips and crushed nuts on top.
